According to The Food Waste Index Report 2021 by UNEP and Waste and Resources Action Programme (WRAP), it is noted that Kenya throws away an average of 99 kilograms of food every year due to spoilage. To combat the state of hunger in Kenya in alignment with The UN’s sustainability goals and African Union Agenda 2063, modern agricultural practices to increase productivity and production have to be adopted.
A major solution to the reduction of post-harvest loss is the innovative practice of Solar Drying. Exploring the solar drying technique holds the promise of alleviating hunger and mitigating post-harvest losses on a global scale.
At its heart, Solar Drying taps into the boundless energy of the sun. By harnessing sunlight, this method transforms the drying process into a sustainable environmental solution with nature. This technique leverages specially innovated solar panels, smartly channeling sunlight into drying chambers where the magic unfolds. In Kenya ASAL regions making about 89% of the country. Solar Drying presents itself as a beacon of hope for farmers and communities struggling with hunger and losses.
One of the most significant advantages of solar drying is its stance on climate action. Relying heavily on renewable energy from the sun, it produces no greenhouse gas emissions or air pollutants. Solar drying contributes positively to sustainability efforts with little to no carbon footprint.
Preserving the quality of dried products is a crucial consideration. Solar drying, due to its gradual and gentle process, often yields dried goods with superior color, flavor, and nutrient retention. The gradual drying process in solar drying is advantageous for maintaining food safety by minimizing the risk of microbial growth. This attribute makes it particularly suitable for drying food items.
